Weight gain so quickly?

I have just recently noticed this same thing. I have been doing weight training and cardio, I _AM_ stronger, I can do more thigns, and my clothes are literally falling off my body, but I weigh more than ever... I guess it is the muscle gain? But damn, that really is a downer... it is all psychological at this point (my feeling fat after looking at the scale).
I _KNOW_ I am thinner, stronger, and in better shape, but that scale is so unforgiving.

I am finding it hard to eat healthy and intake enough calories.
What meal is best to go 'bigger' on? Breakfast? Lunch? NOT DINNER (read my previous post).
By "bigger", I mean a larger portion of a healthy meal.
OR, should I be filling in with snacks?
What is everyones average Breakfast - Snack - Lunch - Snack - Dinner caloric breakdown?
(This is mostly a question for those attempting to lose weight)

Tim, i completely agree. It is because i WANT more.
All of these suggestions are great. I _AM_ only on my 3rd day of this new 'lifestyle', so the fact that this dinner was my first off-course decision is not bad. It did cost me, but I am not letting it ruin my hard work.
When I used to "diet", I would throw everything out the window once I made a bad decision... I would say "Well, I have already ruined it, so I might as well keep eating bad all day/week". But now, I am putting that bad decision last night behind me and considering it a loss.

I am great at eating a healthy balanced diet all day. My weakness: Dinner.
Dinner is what is holding my back. Dinner has and _IS_ my problem with weight. I can't stop once I start, and I eat 2 or 3 servings. I know, I know, will power! "Just dont eat", "eat till you are full!".
I dont know what "just full" is. I know what "oh my gosh, I ate sooo much, ow it hurts" is.
How can I train myself to eat dinner like I eat lunch? or breakfast?
What should I do? How can I be 'full' before dinner? Or should I just skip dinner, because it is too tempting for me, and compensate with a larger lunch & mid day snack before my exercize routine to reach my target caloric intake?

Tim: I am actually having the same problem. I am 'naturally' not eating enough calories as I transform my lifestyle to a healthy one. I am not consciously restricting my calories, but I am not eating enough when I actually add them up.
BTW, a great site for keeping track of caloric intake is calorie-count.com. Free to sign up, and it has all of the same information that the USDA database has, + more (and includes user provided tags for easier searching). The neat thing they have is a NUTRITION GRADE. It tells the grade (A+ to F) of the food item, based on a variety of things. I like that it has prepared food, such as Mr. Pita, Subway, etc etc. I count my calories on that, then input the total daily number on traineo.

I found out that there is a trainer available and I signed up for a half-hour assessment and half-hour planning session. I just took it easy my first day (today) and did some of the things I know (elliptical, arms, and legs). Spent an hour all together. My assessment is sometime this week.
For the first time exercising in.. years, I feel great! And I ate healthy as well. What a difference just a day can make in your outlook.

What would be a good routine for a beginner?
I am trying to lose weight and tone.
I am 5' 10", 227lbs, goal 175lbs, and have access to full array of equipment from a professional gym.
I just need somewhere to start. That seems like the hardest part, finding a 'starters' routine.
