Hi Louise,
I have both insulin resistance and pcos. My seventeen year old daughter has inherited both conditions. Low GI has become a way of life for both of us.
Years of unregulated pcos, resulted in an enlarged uterus and adenomyosis in my case. I have posted my story on the motivation forums.
Eating low GI foods was the single most important change that improved my health.
I also exercise a lot.
Eating whole foods low in GI, eating low fat protein like eggwhites, chicken breast, seafood and eating minimally peeled fruit and penty of vegetables worked for me. I totally avoid trans fats [ mostly found in cookies ] and consume only small amounts of rice bran or peanut oil. As a luxury, I use extra virgin olive oil. But only tiny amounts.
My doc says that I have to do at least 40 minutes of cardio 4 to 5 times a week. I make sure that I get that much if not more.
The only luxury I allow myself, an occasional ice cream. Like once in a couple of months.
All the best in your efforts to beat pcos and insulin resistance.
