It's thanksgiving here in Canada (we celebrate it early to mark the end of harvest).

I just had to share how good I feel that I didn't binge out this Thanksgiving. I had the added benefit/responsibility of making dinner this time around. I was tempted to snack as I cooked but I was also lucky since I was able to make food decisions more in line with my diet.

Grilled pumpkin with roasted pecans instead of sweet potato pie was a big hit and surprisingly, no one missed the stuffing or mashed potatoes because the roasted cauliflower had just the right mix of nuttiness and smooth texture. Finish things off with turkey breast, salad and whole wheat rolls and you have a relatively healthy meal.

That's one holiday meal down and it was a good prep for the more calorie-frightening holiday, just around the corner.

Good job on not binging, it can be hard to do around the holidays. Hopefully we'll all be able to do that with the big holiday around the corner!

Hi Nicole!

What a great achievement! A lot of people would probably cave when it comes to their good eating habits around Thanksgiving and Christmas, however you didn't! If you can get through such an occasion without giving in to temptation, you can do anything!

Nikki I caved on the diet today ! Good for you for sticking to it and I'm going to put on a few extra miles tomorrow for the guilt you caused me. Keep up the good work !

I've never had sweet potatoe pie ... i know AJ would love it.

AJ and I are flying interstate to visit family at Christmas. I'm confident that by then I'll be a better fit for the airline seats.

Good for you for finding and sticking with the healthy options on a holiday - that takes some serious will power!
I'm hoping to loose at least a stone (14 pounds) in time for Christmas... as we're headed to my inlaws this year I'm not sure I'll manage to be as disciplined as you on the day itself but knowing it can be done might just help keep the focus so thank you Your roasted cauliflower alternative to mash (which is one of my killer comfort food cravings) sounds fantastic, I'd love to hear the recipe...

Roasted Cauliflower
1 head of cauliflower
Olive oil (spray )
Salt and (white) Pepper to taste
Chives

Chop the cauliflower into 1-2 in florets. Line a cookie sheet wth foil and spread the cauliflower evenly in the pan. Spray lightly with olive oil, sprinkle with salt and pepper. Toss and spray lightly again and re-season. Place in the oven at the same temperature as your turkey or 350 F/175C. Cook to desired doneness. (30 min - 1 hour), turning it 1-2 times to help even out the cooking.

The tips will brown and this will make it nice and nutty. You can cover it with foil if it gets too dark and you still want them softer. Serve with chives and low fat sour cream. (also great with cumin seeds and pureed into a soup for left overs)

I am starting to have a lot of anxiety about Turkey-Day. It is going to be tough to stay away from the stuffing...

One of my problems is that when I get some success or milestones behind me I begin to lose my intensity.

However, just writing this post helps...

Thanks so much for the recipe! We're doing Turkey Day here, since I have to work during that time, but the upside of not seeing my family is not being around all that fattening home cooking. My husband and I will probably just bake a turkey and make a couple of side dishes.

Nice work, Nikki. My thanksgiving resolutions are to:

* Stuff the turkey, not the chef.

* Remember that the turkey is to be shared, not consumed in one sitting.

* Bear in mind that portions always look smaller in relation to the size of the bird.

* Reflect on the fact that pumpkin pie is not low calorie simply because it includes a vegetable.
