Generally speaking, in Body Pump classes, would it be better while doing squats to use as heavy a weight as I can and not necessarily get quite the same depth of movement, or use a lighter weight to ensure I go as deep as possible?
Thoughts?

First and absolutely foremost, learn how to go down as far as possible. A squat performed in any other manner is inexcusably incorrect. For tips, check out the squat video thread.

It's better to go lower b/c that is what is going to work the right muscle group rather than having a heavier weight.

Go as low as possible while maintaining proper form. If you end up leaning forward/pulling weight off your heels or if you end up bending at your lower back to get a "deeper dig" then you aren't doing yourself any favors. The point of a squat isn't to get your ass to touch the floor or to put strain on your lower back or knees.

This is one of the biggest reasons I'm a front squat advocate; you really cannot cheat the form at all or else the weight will knock you down. If you go too far down your center of gravity will shift and you'll feel the weight wanting to pull you over, but the best part for me is the complete lack of strain on my lower back - I'm pushing more weight with front squats now than I ever did with back squats and I'm realizing that the limiting factor on my back squats wasn't any muscles in my legs at all: it was my lower back.
