I use a small multi grain or whole wheat tortilla and top it with tomato sauce and healthy toppings (don't go over board). Finish it with 1/4 c. shredded mozzarella. The ones I put together are about 300 calories a piece with healthy fiber and veggies.

That's exactly what I did when I was doing the whole low carb thing...I couldn't have the pizza dough....so I had to cut out the carbs somehow. It's a great great snack too!!!

I have used whole wheat pita bread brush the bottom with a little seasoned olive oil and topped with seasoned sliced tomotoes and light on the cheese toss them on the grill for a few minutes

If you want really low carb, you can cut out the tortilla and make a small omelette (1 whole egg and 1 egg white if you want to go low-fat as well), then put your pizza toppings on top of that. Axes yet more carbs. Hurrah!

Team P... I do this as well. I also bake the tortillas with some parmesean cheese... and then I add really spicy salsa. It is a great way to get a meal in and keep the calorie deficit

Tonight I'm having Eggplant pizza! Slice some eggplant rounds - about 1/4 inch thick. Brush with olive oil and salt and pepper. Bake for a little while. Top with tomato sauce and mozzarella. Bake until all melty! YUM.

I do that with the thomas multigrain light english muffins (100 calories)
and turkey pepperoni, if I'm feeling really craaaaaazy

Anne, this wasn't the first time I've had it. I really like it! That and some leftover edamame made a quick and easy dinner. (I needed the protein - lots of working out, dontcha know) Are you a South Beacher too?

Blest - can you tell me roughly how many calories per "pizza" (slice of egg plant) that is, please? It sounds yummy!

Well, I use about 1/4 tsp olive oil and 2 Tbsps mozzarella per slice of eggplant. Eggplant is VERY low in calories - an entire one is only 110 according to Calorie Count! So given that I'm not eating a whole eggplant... I'd say it's about 70-80 calories per slice.

( The South Beach website shows a higher count, but that's because they use 4 times the oil and also add Canadian Bacon.)

I made this for a snack last night, it WAS yummy!

I used salsa at 10 cals for 2 tbspns, and 30g of mozz between the three slices. The eggplant only comes in at about 30 cals max, and I omitted the oil.

Total of 145 Calories for a nice hot snack. Not bad at all!
