I just made this and it is pretty damned tasty if I do say so myself. I can't wait for hub to get home!
It's a bit weird, melding Morrocco and Asia, but it's alright and not too shabby health-wise either.
I call it,
"Asian Couscous"
TOAST UP A HANDFUL OF SHAVED ALMONDS
CHOP:
2 cloves of garlic
1 nub, (2 "), of fresh ginger
1 tbsp capers
1 handful dark raisins
INTO THE SAUCEPAN GOES:
1 cup chicken broth
1/4 cup liquid soy cream, (you could deliciously sub coconut milk)
Liquid from one can chic peas, (250 gr net weight)
2 tbsp of prune jam spread
1 tbsp sweet chile sauce, (no biggie if you don't have any)
1/3 cup yakitori sauce, (you could sub teriyaki)
1 tsp balsamic
About 10 drops of toasted sesame oil
1/4 tsp of Chinese red chile sauce, (more or less acc. to tastes)
1/4 cup finely grated coconut powder
ADD CHOPPED INGREDIENTS and simmer for about 10 minutes.
Then add 2 chopped carrots and cook, (adding water when needed), until almost soft, followed by the chic peas.
Chop up 2 turkey or chicken breasts, (easy if you throw 'em in the freezer about 45 mins. before you need them) and add to the pan, gently cooking for about 15 minutes on a low simmer.
Add more coconut powder if the sauce isn't thick enough. I used the 1/4 cup over the course of the cooking as needed.
Served topped with those lovely almonds.
Make with couscous or brown rice or...
(Apres supper: HUB LOVED IT. We had it with quinoa seasoned lightly with sesame oil and washed it down with Duvel, a fine Belgian brew.)

I'm looking to lose about a hundred lbs in the course of a year, and basically to just consistently get better. And I love comments and messages, so keep 'em coming!
I talk about goal setting a lot, how about I actually set some?
Well it's time to revisit goals... I didn't do too well with my end of year plans, but learned some things and changed my plans up a bit as I went along. During the 5-7 weeks of the year, I was able to put on about 8-10lbs of muscle, and stay at the same actual weight. The plan is to start the Strong Lifts 5X5 program to supplement the Couch to 5K program, and that should last the next 8-12 weeks.
I'm updating goals as well. Lowering cholesterol remains a goal, and I'll find out about that at the end of August.
Been bouncing around a bit, but getting a little stricter again and will monitor that over the next 3-4 weeks. I feel poised to really lose some weight again, so I'm looking forward to the healthy eating and additional exercise.

that sauce sounds complicated, but respect. in the same way people complain about healthy food costing too much money, a lot of recipes cost too much time and effort (unless you're really into it and don't have a lot of other things to do). so for those people...
easy peanut sauce
1 tbsp peanut butter
1 tbsp honey
1 tbsp soy sauce (the aged stuff is more potent)
1 tsp asian garlic chile sauce
1 tsp toasted sesame oil
heat the peanut butter for five seconds. add the honey, heat all that for five seconds (preferrably in your final container, it's hard to move). stir. add the rest and stir again.
apply on some whole wheat noodles (even cold, which i prefer) or whatever healthy pasta you have cooked up and like. add lime tofu or lime chicken if you want, but it's good as a standalone snack.

Hear ya, and that ^^ sounds YUM. I have saved it to my kitchen RAM, cheers, Troy.
I don't have any peanut butter in the house, so I lived within my means, as ole dad used to say...
