I just made this as I've got a gourmet/gourmand house guest arriving soon and it turned out NICE, so I thought I'd share here. It's healthy and tasty--the perfect combo.

Into a blender goes:

250 grams of white beans, drained but not rinsed
1 medium sized onion
2 garlic cloves
10 black olives, pitted
1 heaping tablespoon of capers
1/4 cup olive oil
black pepper to taste


Blend 'til smooth and enjoy as a dip, as a sauce or as a tapenade/pesto on crostini.

I think I'll serve up mine like that on some thinly sliced, fresh 'n crusty artisan whole wheat baguette, maybe with a wee basil leaf on each piece.

Minu. this sounds so yummy.....Yet another thing for me with white beans...i love them. I make a salad by adding spinach & lime juice and some of the above ingredients and have it for lunch 1-2 days a week !!!

Same here :/
I have a friend that also couldn't stand the taste of olives, but he "forced" himself to "train" eating them and by now he even really likes them.

Maybe I'll give it a try

Training to eat certain foods? I haven't heard of this. Interesting concept. Maybe I'll give the recipe to mi mama to try...she loves fine cuisine!

I actually trained myself to eat tomatoes as well! Though I can't take a bite of one, I love them on sandwiches and in cooked dished, and they're not too bad in a salad...

@Minu - what kind of olives did you use? I think I'll give it a go this weekend, but with a bit more garlic

Dave, they're greek-style, they're in a jar, they're semi-dry, (meaning not packed in liquid), and they're YUM. I don't know the brand off-hand, but it's likely not available there anyway.

I say use whatever kind you prefer.

Last night, I threw the mixture in a pan with a squirt of olive oil and enjoyed it even more after.

And today after some mondo-house-cleaning, we ate it ALL.

Guess I'll have to whip up another batch, and the next one will likely contain fresh basil and some grated grana padano cheese.

A couple near by grocery stores have 'olive bars', as does my fromagerie - I will go hunting soon, I see olive pitting in my near future

On a similar note, does anyone have any luck with making their own hummus? I can't seem to get it quite right...
