Does anyone know a healthy recipe for nachos? I don't like ground turkey, but I use extra lean ground beef. I don't even have to have meat, I could maybe use some vegetarian refried beans or other beans. Any ideas? Not too worried about cheese, could maybe use a little fat free sour cream....I love lettuce, tomato, green onion, olives on my nachos. What about the chips? I'm sorry for rambling, I am just really craving nachos for dinner tonight and it's early enough now that I can plan ahead for my calories to fit it in. Any suggestions? Or does anyone know a good recipe sight with low cal and/or healthy recipes? Thanks

I don't have any recipes to share, but I'm sure that Google does.

Check out the Food Network's healthy eating section too.

Thanks Minu for Food Network, I had never thought to check out their website-I don't watch the channel, either since every time I come across it they are making cookies or cakes..lol!

Well, I think you've got a good start there. I think the biggest impact would be made in the nacho area, like getting the low-fat baked nachos. The toppings will probably have little impact, especially if you're loading up on veggies.

I like tabbouleh on my nachos.

Unfortunately the killer variable with nachos, no matter what you put on them is portion control. I could eat a pizza size plate full of nachos if I let myself.
