I just tried to cook some skinless chicken breasts on a George Formen grill. I let them sit in some Italian Dressing for a few minutes first then I sprayed the grill with pam and cooked them. They turned out done on the inside but burnt black on the outside. What did I do wrong? They were pretty large chicken breasts I'm thinking that was it. Maybe the Pam or the dressing?

No need to spray the grills. Also, I think putting dressings on there make it come out burnt on the outside, since the temperatures are extreme.

Did you heat the grill first and then put the cold chicken on? Sometime with those types of grills I found that it's better to put the meat on while the grill is cold and then start the grill. That way, the chicken warms up with the grill and will cook through a bit faster and hopefully before it gets burnt on the outside. You can also let the chicken warm up for 5-10 minutes outside of the refrigerator before adding it to the grill. Also, like Fred said, some dressings (especially those with sugar) tend to burn so that may be a problem.

Anything with oil will tend to burn the outside if left on long enough.

One thing you can also do is wrap the breast in a piece of plastic wrap and pound it thin with a mug, rolling pin, etc before cooking - this will make it cook through quicker. Alternatively you could butterfly the breast to make the thinner meat.

Oh, and always let it get hot first - this will help things form a quick crust and not stick to the grill.

I was tempted but the new man in me showed great restraint in adding a colorful comment or two.

well don't you worry Stacy, I'll be immature enough for the two of us.

I don't have any experience with the Foreman grills, but the only time I've ever burned chicken on a grill is when the heat is excessively high.

i agree with those who said that the dressing can make it burn. try marinating it in the dressing then rinsing the chicken. or do like i do and brine it. its like marinating it in salt water (with brown sugar too to offset the salt). it will stay nice and juicy, then top it with the dressing after you're done for taste.

i also concur with letting the grill heat up first, less sticking and should give you nice grill marks

disclaimer: i have never used a george forman grill, i only use the charcoal grill outside.

later
