Guess I'm on a soup kick, heheh...

I just returned from the kitchen where the following savoury & smooth, slightly rich-tasting, even a little nutty, blended soup emerged, so again, since it's tres healthy, I wanted to share it here.



It really is surprisingly decadent tasting, and with the whole pot, (likely 4 modest/starter servings worth), amounting to no more than likely 350 calories, I myself am even a bit impressed.



INGREDIENTS:

200 grams Raw Spinach
100 Grams Italian Parsley, (had to use it up)
125 ml Soya "Creme"
4 cloves garlic
1 large onion
16 Cherry Tomatoes
1 cup of water
1 teaspoon Curry Powder
1 teaspoon Soya Sauce
1 teaspoon of Balsamic Vinegar
1 teaspoon Chicken Bouillon Powder
Seasalt and fresh ground pepper, (always fresh), to taste

Throw it all in a blender 'til smooth and simmer for about half an hour.


It has an almost coconut-milky taste with the nutty quality of the Soy Cream and I'm glad I actually wrote what I did down this time, as I'll surely be making this again.

Spinach, parsley, garlic, onions and tomatoes - another healthy treat! I really like how this is all done in a blender! With winter knocking on the door and a new diet commitment in hand, I'm going to have to check on blender-only soup cookbooks. Definitely the way to go. Cheers! and thanks Minu!

That's gorgeous, Minu! You should do your own cookbook.

This reminds me...I'll have to look for my recipe for spinach alfredo sauce over pasta--sold to my kids as "alien noodles". It worked for them!
