Here's something I make when I'm either pressed for time or feeling like a no-brainer/low-prep hit at the dinner table.

I use this sauce over white beans, or chic peas, or whole wheat pasta, or brown rice, (or anything else you might fancy), and it's mind-meltingly easy. Nice with cubed chicken breast accents too.

For the Sauce:

-Liquid Soy, (I use a brand available here called, "Bjorg", which comes in ~ 1 cup containers and looks and pours just like liquid cream.)

-Pressed garlic, (as much or as little as you like, I usually use one large clove to 2 smaller ones for a two person serving). Sometimes I even use powdered garlic, which works well too.

--About 1/3 cup of finely grated, fresh Parmesan cheese, or Grana Padano, or a blend. (I've made this with Feta and it's not bad either, plus healthier--but I have to say that the Parmesan really does make this dish shine.)

-Sea salt and fresh ground pepper to taste.


That's it, not even any herbs or spices needed--and the best part is, it involves NO cooking, just drain the pasta/rice/beans/whatever, pour the liquid soy, (as much or as little as you like, depending on the servings made), add the garlic, cheese, salt 'n pepper, stir it up, et voila.

Near guilt-free Alfredo sauce.

I forgot to add that the last time I made this, I cut back on the cheese and instead added the zest of one (small), lemon and MAHAHAAAN--were the lips SMACKIN'!

Ooooh, that sounds good. I've never heard of liquid soy, I'll have to look for it. I've been using and alfredo recipe from an old Cooking Light that uses light cream cheese and half and half. This one sounds much lighter!
