I recently got married (in January). My husband is in the Army and cares much more about health and fitness than I do. I read about this website and figured it might be a good way for me to learn about health and fitness as well. My ultimate goal is to lose a little weight, but eventually I would love to tone my abs, butt, and arms. In the long run I really need to learn how to eat healthier and take care of myself outside of the gym.

I'm a big junk food junkie. Whenever I want a snack or a small meal I just grab chips or something to hold me over until I am ready for an actual meal. And even then my meals tend to be PBJ sandwiches or something microwaveable. I have absolutely no cooking skills so it's hard for me to come up with a good snack or meal because those usually take more skills than I think I have. I would love to learn how to actually cook food.
Does anyone have any suggestions on great snacks or meals that are easy to cook (and preferablly don't take a million ingredients and a whole day to make)?

I don't know if you have any Trader Joe's stores near you, but if you do, they have some awesome stuff for making super-simple, healthy meals. I'm very fond of their jars of "simmer sauces", especially the curry and punjab spinach. All I do is dump them into a sauce pan, add some water (I prefer to add about half as much as they say to), and then toss in some protein. I like to use canned tuna, frozen tilapia, or cubed super-firm tofu (Trader Joe's makes a great, cheap, high protein tofu). Bring it to a boil, simmer for a bit, and then you're done! You can eat it as is, or over some brown rice, etc.
I also really enjoy adding white fish to their pasta sauces, and serving either with whole grain pasta, or frozen brocolli florets that I've nuked. Again, super easy and super healthy.
And finally, real old fashioned or steel cut oats makes the best, and super easy oatmeal. Bring one cup of water to a boil on the stove, add 1/2 cup of oats, lower the heat to medium, and in about three minutes you have this awesome, super-healthy breakfast or snack. Hell, I've been known to make it for dinner in a pinch. You just add whatever you want once it's done for flavor. I like to let it cool down a bit, and then add some flavored protein powder. Mmmm.... So filling, satisfying, and hearty, it's rediculous. And now I have a powerful craving for oatmeal. Damn.

Father of two, husband, Ph.D. of computer engineering, video game aficionado. I have pretty good stamina - can go on long bike rides, take my kids hiking, lift heavy weights, but my figure needs toning. Losing weight through diet and exercise will get me there if I stick to it.

Trader Joe's rules! They have a fantastic selection of inexpensive frozen fish that tastes great. We're eating so much more fish since we've started going to TJ's a lot more.

I also used to be a person who never cooked something more difficult to make than pasta.
BUT, last summer I was babysitting my little siblings for a month and out of sheer boredom I started cooking. There are loads of cookbooks for beginners. I started with something called "Basic Cooking" (or similar) and a cookbook written for students (very simple) and it turned out cooking is not that complicated.
Just try! Cooking really is not that hard!

I started out exercising and dieting in order to qualify for a laparoscopic lap band surgery.
After a few months, I found that I actually felt better, and had more energy, so I decided to scrap the surgery.
I started doing so well in fact, that I inspired my husband, aunt and uncle, and cousin to go to the gym.
In 1.5 years, I'm down 120 lbs, and no surgery! If I can do it, anyone can.

If you're in the US or Canada, Reiman Publications (they publish Taste of Home, and Quick Cooking), also have a magazine called Light and Tasty. Everything in those magazines is delicious, fabulously easy, and they provide nutritional info for all their recipes.
