how low is low?
i guess you could take most recipes and replace certain ingredients to get fewer calories
I've got a recipe for carrot cake. The whole cake is about 800g and one serving of 100g is about 300 calories. If you replace the sugar in this certain recipe with honey and the hazelnuts with almonds you get 20 calories less per serving. Not too much, but a difference

I know that some people subsitute the fat in a recipe with unsweetened apple puree - maybe try experimenting with that in small batches.

Okay, I'm not saying this sounds like real carrot cake, but does look easy to make...

From Cooks.com

CARROT CAKE - LOW CALORIE

4 slices wheat bread, crumbed
4 eggs
4 tbsp. oil
2 tsp. vanilla
1 1/3 c. dry milk
2 tsp. baking soda
3/4 c. brown sugar substitute
2 tsp. cinnamon
2 c. pineapple
4 oz. grated carrot

Blend all ingredients in blender until smooth, bake at 350 degrees for 45 minutes.

If you go to splenda.com you'll find tons of low-cal recipes without sugar that are out of this world. One of my favorites is a sweet potato recipe with a crusty topping (can't remember the name of it). Good luck!

If you substitute buttermilk for most of the oil in any recipe, I'm telling you that you will not miss it. I tried the applesauce thing, and didn't like it. Substituting buttermilk for most of the oil results in a super moist, delicious cake. (I do like using some of the oil in the recipe, though, because I think some fat is needed for taste).
