I'm in charge of bringing an appitizer for a birthday party next Sunday. Anyone have any good recipes that would be healthy to eat?

sliced tomatos with a little bit of balsamic vinger on it?
fresh salsa & light crackers?
fruit salad?
tomato soup? (guspatcho?)
veggies and dip?

I was thinking of bringing baby carrots and other veggies and hummus. That may be my easiest choice. Thanks for the ideas!

sliced thin baked sweet potatoes lightly salted....

thick slices of cucumber with the middles hollowed out and tuna in the middle...

Blender for smoothies with the fixings: tofu, frozen berries, soy milk, ice, peanut butter, honey, etc.

If you can have whole grains, then I highly recommend my Tomato Triscuit Treats .

Otherwise, Parmesan Zucchini Sticks are seriously yummy.

Blest - Both of those recipes sound great! Thanks for the tips. I'll probably do the zucchini sticks since my bf isn't too fond of triscuits (however, I think they rock too! I just bought another box tonight lol).
