Mushroom burger
Preparation time less than 30 mins
Cooking time less than 10 mins

Ingredients
1 large flat mushroom
1 bap
For the filling:
a handful lettuce, shredded
1 tomato, sliced
1 mushroom, sliced

Method
1. Lightly brush a large flat mushroom with oil and grill or barbecue for 3 minutes. Turn over and grill for a further 2 minutes.
2. Spread some mustard over one half of a bap.
3. Fill with shredded lettuce, sliced tomato and mushroom.
4. Top with remaining half bap.


Noodle Salad
Preparation time less than 30 mins
Cooking time 10 to 30 mins


Ingredients
110g/4oz egg noodles, cooked according to packet instructions
handful of fresh coriander, chopped
1 lime, juice only
salt and freshly ground black pepper
2-3 tbsp soy sauce
1-2 tbsp sesame oil
1 tsp olive oil
½ red pepper, sliced
2 spring onions, sliced

Method
1. Place the cooked egg noodles into a bowl. Add the chopped coriander, lime juice, soy sauce and sesame oil. Carefully toss together and season to tase.
2. Heat the olive oil in a frying pan and sauté the red pepper and spring onions for 4-5 minutes to soften.
3. Mix the peppers and spring onions into the noodle mixture, and serve on a large serving plate.


Risotto
Preparation time less than 30 mins
Cooking time 10 to 30 mins

Ingredients
200g/7¼oz risotto rice
1 small handful of basil, chopped
55g/2oz romero red pepper, diced
1 handful baby spinach, shredded
salt and freshly ground black pepper, to taste

Method
1. Cook the rice according to packet instructions.
2. Stir in the basil, the diced pepper and the shredded spinach.
3. Season to taste before serving.


Tomato Sauce
Preparation time less than 30 mins
Cooking time 10 to 30 mins

Ingredients
1 medium onion, roughly chopped
2 cloves garlic, roughly chopped
1 red finger chilli, roughly chopped
1 tin chopped plum tomatoes, sieved
100ml/fl oz extra virgin olive oil
1 bunch fresh basil, torn
Maldon sea salt and freshly ground black pepper

Method
1. Place the onion, garlic and chilli in a blender and blend to a paste. Add the tomatoes and blend again.
2. With the motor running add the olive oil in a light, steady stream, to form an emulsion.
3. Season generously with salt and black pepper. Place in a saucepan and bring to the boil. Reduce to a simmer and allow the sauce to cook for 10-15 minutes.
4. Finally stir in the basil.

Yes Jem M, a bap is a soft bread roll. Sorry I'll have to be more mindful in future about differing names from over the pond.
